Whole roast cauliflower with mustard, bacon and cheese

Ingredients:

1 large cauliflower
3 tablespoons Broighter Gold rapeseed oil
1 teaspoon seasalt
2 teaspoons Dijon mustard
½ teaspoon turmeric
100g grated mature cheddar
2 slices streaky bacon
25g coarse breadcrumbs
1 tablespoon chopped parsley

Method:

  • Wash the cauliflower and place in baking tray lined with foil.
  • Mix the oil, salt, mustard and turmeric together and brush all over the cauliflower.
  • Roast for about an hour or until tender.
  • Fry the bacon in a dry pan until crisp and golden.
  • Remove from the pan and chop finely.
  • Fry the crumbs in the remaining fat until crispy and golden.
  • Mix the crumbs, bacon and parsley together.
  • When the cauliflower is soft sprinkle over the cheese and roast for 5 minutes.
  • Place on a serving dish and sprinkle over the bacon crumbs. Serve.
